Healthy Pumpkin Blondies
[gluten, dairy + refined sugar free]
This recipe is SO easy - you throw all of your ingredients into your loaf pan, stir up, fold in your chocolate chips and you will have the most delicious, healthy, moist pumpkin blondies in 20 minutes! Enjoy! xo
INGREDIENTS:
1/2 cup pumpkin purée
1 egg
1/4 cup almond butter or peanut butter, make sure it’s drippy
1/3 cup maple syrup
1 cup oat flour (blend up some oats)
1/2 tsp baking powder
1/2 tsp cinnamon
1 tsp pumpkin pie spice
dairy free/sugar free chocolate chips
DIRECTIONS:
Preheat oven 350 F.
In a prepared loaf pan, cover in coconut oil if metal (I use a silicone loaf pan so don’t need to add oil) mix together the wet ingredients (first 4 ingredients) and then the remaining ingredients. Mix well!
Stir in the chocolate chips, and top with some more.
Bake for 20-25 minutes or until a toothpick comes out clean
