Healthy Harvest Salad

This is the perfect Fall salad! We made it this weekend for date night in and it was SO delicious and easy! I didn’t feel like making a protein so got an organic roasted chicken already cooked & voila, saved lots of time. Enjoy it! Xo

INGREDIENTS:

Salad:

  • Greens or Kale

  • Brussels 

  • Sweet and Purple Potatoes

  • Goat Cheese

  • Roasted chicken

  • Dried Cranberries

  • Roasted Pumpkin Seeds

    Dressing:

  • 1/4 cup tahini

  • Juice of 1/2 a lemon

  • 1 tablespoon apple cider vinegar

  • 1 tablespoon maple syrup

  • Pinch of salt + pepper

  • 3 – 5 tablespoons of water 

DIRECTIONS:

1. Set the oven to 425 F, toss  your chopped Brussels in some olive oil, salt, pepper and garlic powder. Roast for 20-30 min until brown and crispy! 

2. Chop your sweet potatoes, toss in olive oil, salt, pepper and garlic powder. Throw into the airfryer set to the french fry setting. 

3. Whisk up your dressing add more water if too thick. 

4. Let the above all cook until done, then assemble your salad and top with sweet potato, Brussels, dressing, goat cheese, cranberries, pumpkin seeds, chicken and devour!
