Healthy Fried Peppers

Grandma G’s Fried Pepper’s! My mother in law makes these delicious fried peppers for Sunday dinner and they are INCREDIBLE! She wrote out the recipe for me as it has been tried and true for years. So tasty, with a hint of sweet and spice but you can eliminate the spice if you want them mild! Perfect to pair with chicken cutlets, sausage or a healthy side dish/ragu. Enjoy! xo

INGREDIENTS:

  • 2 green bell peppers

  • 2 red sweet peppers

  • 2 banana peppers (optional or just one for less hot)

  • 2 medium onions chopped

  • 2 cloves garlic minced

  • 1 large tin organic diced tomatoes (around 800ml)

  • 2 large eggs

  • olive oil

  • salt and pepper

DIRECTIONS:

  1. Cut the peppers into bite size chunks and banana peppers into smaller diced pieces and make surer all seeds are gone!

  2. Add olive oil to a large pan, add onions and garlic and sauteé until soft, then add in all of the peppers, salt and pepper to taste. Cook until all soft.

  3. Once cooked, add in diced tomatoes, bring to a boil and lower heat and cook until almost all of the liquid is gone.

  4. Then add in the eggs, stir into the mixture and keep stirring until all is mixed through and cooked.

  5. Then we devour!!!
