Peanut Butter Protein Bownie Cups

Sunday baking = no-bake protein treats This is the perfect combo for a summer dessert. Protein packed, clean ingredients and so freaking delicious! Brought them to family dinz, and needless to say we demolished them Made with my @aphina.co plant protein [code MICHELLEMETHOD], @pb2foods, sugar free chocolate + a few more minimal ingredients - NO baking required!  

INGREDIENTS:

  • 1/4 cup Cashew or Almond Milk 

  • 1/4 cup coconut sugar 

  • 1/4 cup Melted coconut oil 

  • 1 + 1/4 cup oat flour (blend oats in blender)

  • 1/4 cup cocoa powder 

  • 2 tbsp shredded coconut 

  • 1/2 cup -2/3 cup greek yogurt 

  • 1 scoop Aphina plant protein code: MICHELLEMETHOD

  • 1-2 tbsp PB2 Peanut Butter Powder or regular PB

  • 1/2 cup dark chocolate, sugar free or dairy free

  • 1 tbsp coconut oil 

DIRECTIONS:

1. Combine 1/4 cup non-dairy milk with 1/2 cup coconut sugar, 1/4 cup melted coconut oil. Stir in oat flour, 1/4 cup cocoa powder and shredded coconut.

2. Press into cupcake liners I use silicone liners. 

3 . Combine greek yogurt with protein and PB2, until whipped consistency.

4. Fill cups with yogurt filling.

5. Melt 1/2 cup chocolate chips with 1 tbsp coconut oil. Pour or drizzle onto cups. Freeze until set. Keep in the fridge or freezer if you want them at a later date, but you’ll need to thaw out before eating.
