Healthy Mexican Street Corn Salad
The BEST summer salad with fresh corn, herbs, jalapeño, avocado, toasted pumpkin seeds, and the best creamy dressing. The perfect summer side dish/ salad to serve with any grilled protein, or as a chunky dip on tacos, enjoy!!!
INGREDIENTS:
4-5 cups romaine, chopped
3-4 ears of grilled Corn
2 tbsp olive oil
3 tbsp rice vinegar
2 tbsp vegan mayo or @primalkitchenfoods mayo
1 grated garlic clove
3/4 tsp paprika
Himalayan sea salt black pepper
1 small shallot, thinly sliced into rings
1/2 cup diced tomatoes
2 ripe avocados, peeled and cut into small cubes
1 jalapeño, seeds removed, finely chopped
1/4 cup fresh cilantro, chopped
1/4 cup roasted pumpkin seeds/pepitas
2 tbsp chopped green onion
3 tbsp goat/sheep feta
DIRECTIONS:
Prepare your dressing - combine olive oil, rice vinegar, mayo, garlic, paprika, 1/4 tsp salt and 1/4 tsp black pepper in a mason jar/bowl; whisk to combine. Stir in shallots and set aside.
Once your grilled/charred corn is cool enough to handle, cut the kernels from the corn and add to a bowl of romaine, along with diced avocado, tomatoes, green onion, jalapeño, cilantro, pumpkin seed, goat feta cheese, top with a little salt and black pepper.
Pour dressing over salad and toss to combine.
Garnish with extra herbs, seeds, and cheese, if desired + serve as a side with your fav protein!
