Italian Almond Cookies

These 5-ingredient Italian almond cookies are gluten and grain free, light, fluffy, and perfectly sweetened. With a delicate almond flavour, theyโ€™re so simple, yet they taste phenomenal! They turn out crisp along the edges while the outside remains soft and the inside remains slightly chewy with the perfect crumb  

PS you can use a sugar substitute like @swervesweetie BUT this time around I used regular organic cane sugar bc my Italian relatives would be rolling in their graves lol!

INGREDIENTS:

  • 3 cups almond flour

  • 1 cup organic cane sugar or sugar alternative

  • Zest from a small orange 

  • 3 egg whites

  • 2 tsp almond extract 

  • Organic icing sugar to roll or Swerve icing sugar alternative 

  • Full almond or almond slices to top

DIRECTIONS:

1. Preheat your oven to 350F, in a large mixing bowl, add in almond flour, sugar, zest from your orange and stir well.

2. Then add in your egg whites, almond extract and mix well, keep folding with a spatula and use your hands until all mixed together!

3. Roll the dough into small balls, then roll into icing sugar, place all of the cookies onto a parchment lined baking sheet and top with an almond in the centre or almonds slices.

4. Bake for 17 minutes, let cool and devour!
