Chewy Chocolate Chip Cookies

It isn’t cookie season until you’ve had these gooey, decadent chocolate chip cookies! These are the most delicious cookies - perfect for the holidays or for your cookie exchange. I’ve been making these for years, they’re always a hit with the kids + for anyone that devours them! Enjoy! xo 

INGREDIENTS:

  • 1/2 cup almond butter 

  • 1/4 cup pure maple syrup

  • 3 tbsp coconut sugar

  • 3 tbsp coconut oil, softened

  • 1/2 tsp vanilla extract

  • 1/2 cup rolled oats or quick 

  • 1/4 cup + 2 tbsp oat flour or gf flour 

  • 1/4 cup arrowroot flour

  • 1/4 cup almond flour

  • 1/2 tsp baking soda

  • 1/2 tsp Himalayan sea salt

  • 1 cup dairy free chocolate chips @enjoylifefoods 

DIRECTIONS:

1. Preheat the oven to 350 F and line a baking sheet with parchment paper.

2. In a large bowl stir together the wet ingredients - almond butter, maple syrup, oil, and vanilla, until completely smooth.

3 Stir the dry ingredients - oats, oat flour, arrowroot, almond flour, baking soda, and salt, into the wet mixture until combined. 

4. Stir the chocolate chunks into the batter until combined. 

5. Using a cookie scoop or a spoon, scoop the dough, about 2 tbsp of dough per cookie.  Add onto the baking sheet, about 3 inches apart. 

6. Press more chocolate chips onto the tops of the cookies. 

7. Bake for 8 to 10 minutes until the cookies are spread out.

8. Cool the cookies directly on the baking sheet for about 5 to 6 minutes. The cookies will be super delicate until they are cooled. Using a spatula, gently transfer each cookie directly onto a cooling rack for another 10 minutes, where they’ll firm up even more. Enjoy!
