Fudgy Peppermint Brownies

Grain, gluten and dairy free brownies! We are 7 sleeps away from …so let’s get baking! This is my most popular Christmas dessert - the best part is that no one can tell that it’s healthy, made with an almond flour base + dairy free chocolate this ooey, gooey delish Christmas treat will be your new fav!  

INGREDIENTS:

• 2/3 cup dark dairy free chocolate chips and/or sugar free 

• 5 tbsp coconut oil

• 2/3 cup coconut sugar

• 2 eggs

• 1 tsp vanilla extract

• 1/2 tsp peppermint extract

• 2/3 cup almond flour

• 2 tbsp unsweetened cocoa powder

• 1 tsp baking soda

• 1/4 tsp Himalayan sea salt

• 1/2 cup additional chocolate chips

• Optional topping: crushed candy canes

DIRECTIONS:

1. Preheat the oven to 350F.

2. Line an 8×8 baking dish with parchment paper.

3. In a small saucepan on low melt 2/3 chocolate chips and coconut oil over low heat until smooth. Remove from heat. While the chocolate is melting. whisk together eggs and coconut sugar in a medium bowl.

4. When the chocolate is melted and removed from the heat, slowly whisk in your egg/sugar mixture and beat to combine. Stir in vanilla extract, peppermint extract, and salt. Add baking soda and almond flour. Sift in cocoa powder and stir until combined.

5. Fold in additional chocolate chips. Pour batter into your prepared baking dish. Gently smooth out the batter with a spatula. Sprinkle with candy canes (if using) or sprinkles

6. Bake for 20-25 minutes, or until brownies have puffed up a bit. Let them cool completely. The brownies will have more puff to them straight out of the oven than they will when cooled, so make sure to let them completely cool and settle before cutting :)
