Protein Peanut Butter Eggs
I make these Protein Peanut Butter Eggs every year around this time and they are always a huge hit! This time I switched it up using white chocolate and WOW - soooo good and a great way to even sneak in some extra protein ;) Enjoy! Xo
INGREDIENTS:
3/4 cup natural peanut butter
1/4 cup maple syrup
1/4 cup Aphina Plant Protein (click for direct link)
1/2-2/3 cup white chocolate chips (can use Enjoy Life or any sugar free brand)
1 tsp coconut oil
optional sprinkles
DIRECTIONS:
Add peanut butter to a bowl and stir in protein powder until you get a nice fluffy texture, then add in maple syrup- if too running add in a little more protein, if too sticky as a teeny bit more maple syrup.
Scoop out about 2 tbsp each and set on a parchment paper lined plate. Lightly form into eggs with a spoon or your fingers. Freeze for 15/30 min. Once they are frozen, you can smooth out any bumps/form them a little better if you want.
Melt white chocolate and coconut oil in the microwave in 30 second increments, stirring between each.
Dip each egg into the chocolate and set back into the freezer for 5 minutes.
Optionalโ use remaining chocolate for an extra chocolate drizzle if you want and top with sprinkles.
