Peanut Butter Mini Egg Protein Bars
These easy no-bake PB bars are the perfect Easter treat, especially with a lil’ mini egg chocolate ganache action on top ;) I always love to add in a punch of protein too! Enjoy!
INGREDIENTS:
1 cup natural peanut butter
1/3 cup + 1-2 tbsp coconut flour
1/2 cup maple syrup
1-2 scoops Aphina Plant Protein (click for direct link)
Chocolate ganache topping:
1/2 cup dark chocolate chips (can use Enjoy Life or any sugar free brand)
1/4 cup natural peanut butter
1 -2 tbsp coconut oil
crushed mini eggs
DIRECTIONS:
Add peanut butter to a bowl and stir in coconut flour, protein powder until you get a nice fluffy texture, then add in maple syrup.
Place the peanut butter mixture in a small baking dish 8x8 or smaller.
Melt chocolate. peanut butter and coconut oil in the microwave in 30 second increments, stirring between each.
Pour the chocolate over the peanut butter layer, top with crushed mini eggs.
Place in the freezer until set, and then store in the fridge!
