Banana Chocolate Protein Muffins
These are so delicious and easy to make! They're one of my favourite things to always have on hand for a healthy snack or treat. You guys are going to love it!
Makes 12 Muffins:
INGREDIENTS:
3 bananas
2 eggs
3/4 cup greek yogurt
1/4 cup maple syrup
1 tsp vanilla
2 cups oat flour (blend your oats)
2 scoops protein powder (30g) - I use APHINA code: MICHELLEMETHOD
1/4 cups coconut sugar
2 tsp baking powder
1 tsp baking soda
dash of cinnamon
pinch of salt
chocolate chips
DIRECTIONS:
Preheat oven to 350F. Mash bananas in a bowl and add all wet ingredients. Mix, but don't over mix, until combined.
Add your oats to a blender and blend to make oat flour. Pour into the banana mix along with all the other dry ingredients. Mix (again don't over mix!) until just combined. Add chocolate chips and fold into batter.
Scoop batter into a prepared muffin tin and top with more chocolate chips. Pop into the oven And bake for 15-18 minutes
