Strawberry Shortcake
Nothing screams spring or summer dessert like Strawberry Shortcake! 🍓 I am sharing a FREE recipe with you all from one of my digital Summer Cookbooks because it’s a must try! Made with minimal ingredients, this grain free, dairy free, super healthy version is one of my dessert staples especially when I host a dinner party. Enjoy!!! xo
INGREDIENTS:
2 + 1/4 cup almond flour
1/2 tsp baking soda
1/2 tsp sea salt
2 eggs
3 tbsp coconut oil, melted
1 tbsp coconut sugar
1 tbsp maple syrup
1 tsp vanilla extract
CocoWhip or Coconut Whipped Cream
Strawberries, diced
DIRECTIONS:
Preheat oven to 350 F. Line a baking sheet with parchment paper.
In a mixing bowl, combine almond flour, salt, baking soda.
Add the eggs, oil, maple syrup, coconut sugar, vanilla and stir until combined.
Using a 1/4 measuring cup, measure out dough. Use your hands to form a round shortcake, 2 inches thick.
Place each shortcake onto a prepared baking sheet and press down slightly.
Bake for 15-17 minutes or until the centre is cooked and tops start to crack.
Remove from oven and cool completely.
Serve your shortcake with a heaping spoonful of strawberries and a dollop with coconut whip
