Chipotle Shrimp Tacos with Avocado Crema
These tacos are SO easy to make, so healthy and so delish!!
INGREDIENTS:
Shrimp:
20 jumbo shrimp peeled
1/4 cup olive oil
1/2 tsp cumin
1/2 tsp salt
1 tsp smoked paprika
1/2 tsp chipotle powder
2 garlic cloves, crushed
Corn Tortillas
Fresh Pico De Gallo
Avocado Crema :
1 avocado
2 garlic cloves, crushed
1 tos cilantro
1/4 tsp cumin
1 lime, juiced
1/2 tsp salt
1-2 tbsp Greek yogurt
DIRECTIONS
1. Toss the shrimp in all of the ingredients and set aside in the fridge to marinate
2. Make the Avocado crema, in a food processor blend together everything but the Greek yogurt. Blend, then stir in the Greek yogurt and place in the fridge.
3. Sauté the shrimp until cooked through.
4. Warm up the corn tortillas, then spread the crema, optional pico and toppings, shrimp and sprinkle with cilantro
