Healthy Carrot Cake

INGREDIENTS:
1 cup non-dairy milk
2 eggs
1/2 cup maple syrup
1/3 cup coconut sugar
2 tbsp coconut oil, melted
1 tsp vanilla extract
1 cup almond flour
1 cup oat flour (blend oats in a blender)
2-3 tsp cinnamon
1/2 tsp baking powder
1/2 tsp baking soda
1 + 1/2 cup finely grated carrot (about 2 medium carrots)
1/3 cup chopped walnuts
1/4 cup raisins
Protein vanilla frosting:
Hello Amino (code MICHELLE10) Protein Vanilla Icing mixed with cream cheese
OR
cream cheese and icing sugar (can use Swerve) and beat until consistency is good
DIRECTIONS:
1. In a large bowl, mix together all of the wet igredients and the coconut sugar.
2. Add in the dry ingredients, except for the carrots, walnuts, and raisins, and mix again.
3. Stir in the carrots, walnuts, and raisins and mix until combined.
4. Pour batter into a parchment lined 8x8 pan and bake at 350ยฐF for 30 min. Let completely cool before adding the frosting and enjoy! Keep stored in the fridge.
