Buddha Bowls
We whipped these bowls up last week + they were The dressing is incredible and this recipe is a super clean, delicious plant based bowl. Perfect for a quick, easy + healthy din!
INGREDIENTS
Bowls
Romaine Lettuce
Spinach
Sweet Potato wedges, baked
Broccoli, baked
Cucumber
Cherry Tomatoes
Avocado
Tofu, 1 block extra firm
1 tbsp olive oil
1 tbsp Tamari or Soy
2 tbsp Nutritional Yeast
Salt, pepper, garlic powder
Tahini Dressing-
1/3 cup tahini
1 medium lemon, juiced
1-2 tbsp maple syrup
1 pinch sea salt
1 clove garlic, minced
3-6 tbsp water to thin
DIRECTIONS
1. Preheat oven to 375 F. Take out the excess moisture in your tofu, cut into cubes. Grab a large bowl and toss the tofu in the olive oil, tamari, nutritional yeast, salt, pepper, garlic powder. Bake for 25-30 min until crispy.
2. Chop your romaine lettuce, assemble your bowl with your romaine, spinach, baked sweet potatoes and broccoli (can make these fast in the air fryer), avocado, tomatoes, cucumber.
3. Whisk up your Tahini dressing.
4. Once your tofu is cooked, add to you bowl, pour your tahini dressing over top + voila!
